THE PIRI-PIRI SQUASH-SWELL

Ingredients
- 1 Butternut squash (cubed)
- 1 tbsp Piri-Piri flakes
- 1 tsp Smoked paprika
- 1 tsp Salt
- 3 tbsp Olive oil
- 1 tbsp Honey
- 1 tbsp Wine vinegar
Cooking Method
- The Mix Toss squash with oil and spices in a large tray.
- The Bloom Add a tiny 15ml splash of water to the tray; the moisture will help the piri-piri oils stain the squash skins.
- The Scorch Roast at 210°C for 25 minutes until the edges are rock-hard charred and caramelized.
- The Marriage Drizzle with honey and vinegar while hot from the oven.
- The Final Flourish Top with raw fresh coriander and a hit of raw lemon zest.
