THE PIRI-PIRI REEF-TENTACLES
(Our Play on Grilled Octopus with Fire Oil)

- 500g Cooked Octopus (tentacles)
- 1 tbsp Piri-Piri paste
- 1 tsp Smoked paprika
- 1 tsp Salt
- 60ml Extra virgin olive oil
- 1 Lemon (juiced)
- 2 cloves Garlic (crushed)
Cooking Method
- The Coat Toss octopus with half the oil, garlic, and spices.
- The Bloom Add a tiny 10ml splash of water to the spice rub; the moisture will bloom the piri-piri.
- The Scorch Grill on maximum heat for 4 minutes per side until the edges are rock-hard charred.
- The Marriage Whisk remaining oil and lemon juice; drizzle over the hot charred reef.
- The Final Flourish Finish with a massive hit of raw fresh parsley and extra sea salt.
