THE PIRI-PIRI REEF-LACQUER

Ingredients
- 400g King prawns
- 2 tbsp Piri-Piri paste
- 1 tsp Turmeric
- 1 tsp Garlic powder
- 100ml Light Beer
- 50g Butter
- 1 Lemon (juiced)
Cooking Method
- The Scorch High-heat stir-fry prawns in oil for 2 minutes until charred and pink; remove.
- The Bloom Add piri-piri, turmeric, and garlic powder with a 30ml splash of beer; the steam will release the golden spice oils.
- The Swell Add remaining beer and butter; boil until it reduces to a thick yellow silk.
- The Marriage Return prawns; toss until lacquered.
- The Final Flourish Top with raw fresh parsley matchsticks and extra lemon zest.
