THE PIRI-PIRI BEAN POT
(Our Play on Spicy Portuguese White Beans)
Ingredients: 400g White beans (canned/rinsed), 1 tbsp Piri-Piri flakes, 1 tsp Smoked paprika, 1 small onion (pureed), 2 cloves Garlic, 50ml Olive oil, 100ml Tomato passata, 1 tbsp Red wine vinegar...
Ingredients
- 400g White beans (canned/rinsed)
- 1 tbsp Piri-Piri flakes
- 1 tsp Smoked paprika
- 1 small onion (pureed)
- 2 cloves Garlic
- 50ml Olive oil
- 100ml Tomato passata
- 1 tbsp Red wine vinegar
Cooking Method
- The Architect Fry onion puree and garlic in oil until sweet and golden.
- The Bloom Add spices and vinegar with a 20ml splash of water; the sudden steam will release the fiery oils.
- The Marriage Add passata and beans; toss on high heat for 5 minutes until coated in the red fire-silk.
- The Final Flourish Finish with a massive hit of raw fresh coriander and extra raw olive oil.
