(Our Play on Balkan Spinach Pie with a Turkish Heart)

- 200g Feta
- 50g Pine nuts (toasted)
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
- 2 Eggs
- 100ml Milk
- 4 sheets Phyllo pastry
Cooking Method
- The Wilt Blanch spinach; squeeze bone-dry.
- The Bloom Whisk eggs, milk, and spices with a tiny 10ml splash of water to release the woody nutmeg.
- The Marriage Combine spinach, feta, pine nuts, and egg silk.
- The Scorch Fold into phyllo triangles; roast at 200°C for 25 minutes until rock-hard golden charred.
- The Final Flourish Brush with raw extra virgin olive oil and top with raw fresh dill.
