Ingredients: 500g Spinach, 200g Feta, 50g Pine nuts (toasted), 1 tsp Black pepper, 0.5 tsp Nutmeg, 2 Eggs, 100ml Milk, 4 sheets Phyllo pastry...

  • 500g Spinach
  • 200g Feta
  • 50g Pine nuts (toasted)
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg
  • 2 Eggs
  • 100ml Milk
  • 4 sheets Phyllo pastry

Cooking Method

  1. The Wilt Blanch spinach; squeeze bone-dry.
  2. The Bloom Whisk eggs, milk, and spices with a tiny 10ml splash of water to release the woody nutmeg.
  3. The Marriage Combine spinach, feta, pine nuts, and egg silk.
  4. The Scorch Fold into phyllo triangles; roast at 200°C for 25 minutes until rock-hard golden charred.
  5. The Final Flourish Brush with raw extra virgin olive oil and top with raw fresh dill.
