THE PICKLED FIRE-STARTER

Ingredients: 500g Chicken thighs (3cm chunks), 2 Large onions (pureed), 1 tsp Mustard seeds, 1 tsp Fennel seeds, 1 tsp Nigella seeds, 2 tbsp Mixed Indian pickle, 100g Greek yogurt...

Ingredients

  • 500g Chicken thighs (3cm chunks)
  • 2 Large onions (pureed)
  • 1 tsp Mustard seeds
  • 1 tsp Fennel seeds
  • 1 tsp Nigella seeds
  • 2 tbsp Mixed Indian pickle
  • 100g Greek yogurt

Cooking Method

  1. The Temper Sizzle the whole seeds in 2 tbsp oil until they pop and release their aroma.
  2. The Architect Add the pureed onions and cook until the water has evaporated and they are golden brown.
  3. The Bloom Add the chicken and pickle with a splash of water; stir-fry for 5 minutes.
  4. The Simmer Whisk in the yogurt; simmer covered for 10-12 minutes until the chicken is tender.
  5. The Finish Finish with a squeeze of lemon and fresh coriander.
