THE PICKLED FIRE-STARTER
(Our Play on Achari Chicken)
Ingredients: 500g Chicken thighs (3cm chunks), 2 Large onions (pureed), 1 tsp Mustard seeds, 1 tsp Fennel seeds, 1 tsp Nigella seeds, 2 tbsp Mixed Indian pickle, 100g Greek yogurt...
Ingredients
- 500g Chicken thighs (3cm chunks)
- 2 Large onions (pureed)
- 1 tsp Mustard seeds
- 1 tsp Fennel seeds
- 1 tsp Nigella seeds
- 2 tbsp Mixed Indian pickle
- 100g Greek yogurt
Cooking Method
- The Temper Sizzle the whole seeds in 2 tbsp oil until they pop and release their aroma.
- The Architect Add the pureed onions and cook until the water has evaporated and they are golden brown.
- The Bloom Add the chicken and pickle with a splash of water; stir-fry for 5 minutes.
- The Simmer Whisk in the yogurt; simmer covered for 10-12 minutes until the chicken is tender.
- The Finish Finish with a squeeze of lemon and fresh coriander.
