THE PICKLED CAULIFLOWER

Ingredients: 1 Medium head of cauliflower (small florets), 2 tbsp Mixed Indian pickle, 1 tbsp Tamarind paste, 1 tsp Turmeric, 1 tsp Fennel seeds, 1 tsp Nigella seeds...
Ingredients
- 1 Medium head of cauliflower (small florets)
- 2 tbsp Mixed Indian pickle
- 1 tbsp Tamarind paste
- 1 tsp Turmeric
- 1 tsp Fennel seeds
- 1 tsp Nigella seeds
Cooking Method
- The Scorch Fry cauliflower florets in a wide pan until they have charred brown spots.
- The Bloom Add the seeds, pickle, and a tiny splash of water to create a dark steam.
- The Marriage Toss for 5 minutes until the cauliflower is tender but crunchy and coated.
- The Final Flourish Finish with plenty of fresh coriander and a squeeze of lime.
