Ingredients: 4 Hard-boiled eggs (peeled), 1 tsp Turmeric, 1 tsp Black pepper, 1 tsp Garam masala, 1 Red onion (finely diced), 100g Tomato passata...

Ingredients

  • 4 Hard-boiled eggs (peeled)
  • 1 tsp Turmeric
  • 1 tsp Black pepper
  • 1 tsp Garam masala
  • 1 Red onion (finely diced)
  • 100g Tomato passata

Cooking Method

  1. The Scorch Sear the whole boiled eggs in a tiny bit of turmeric and oil until the skin is bubbly.
  2. The Architect In a fresh pan, sauté onions until golden brown.
  3. The Bloom Add spices and a 20ml splash of water to form an aromatic paste.
  4. The Simmer Add passata and eggs; simmer for 5 minutes until the sauce grips the eggs.
  5. The Final Flourish Garnish with a handful of coriander and fresh green chilies.
