- 6 Eggs (whisked)
- 1 tsp Smoked paprika
- 1 tsp Chili flakes
- 1 Red onion (diced)
- 100g Chorizo (diced)
- 100g Manchego (grated)
Cooking Method
- The Scorch Fry the onion and chorizo in oil until the meat is crispy and fat renders.
- The Bloom Add paprika and chili with a tiny 15ml splash of water to release the spicy oils.
- The Marriage Pour in the eggs and cheese; cook on medium-low for 5 minutes without stirring.
- The Char Place under a hot grill for 3 minutes until the top is a charred, bubbling gold.
- The Final Flourish Top with raw fresh oregano and a drizzle of raw olive oil.
