THE PEPPER-STUNG EARS
(Our Play on Orecchiette with Anchovies)
Ingredients: 200g Orecchiette, 4 Anchovy fillets, 3 cloves Garlic (sliced), 2 tsp Black pepper, 1 tsp Chili flakes, 50ml Olive oil, 200g Broccoli (minced)...
Ingredients
- 200g Orecchiette
- 4 Anchovy fillets
- 3 cloves Garlic (sliced)
- 2 tsp Black pepper
- 1 tsp Chili flakes
- 50ml Olive oil
- 200g Broccoli (minced)
Cooking Method
- The Boil Cook pasta and broccoli in the same pot of salted water until soft.
- The Architect Fry garlic and anchovies in oil until the anchovies melt.
- The Bloom Add the pepper and chili with a 30ml splash of pasta water to create a dark, peppery silk.
- The Marriage Toss the pasta and broccoli through the fire-oil until fully coated.
- The Final Flourish Top with raw pecorino and a final dust of black pepper.
