THE PEPPER-RED REEF

Ingredients: 400g King prawns, 1 Red onion (minced), 3 cloves Garlic, 200g Cherry tomatoes (halved), 1 tsp Chili flakes, 1 tsp Dried Oregano, 1 tsp Salt, 100g Feta (crumbled), 50ml Ouzo, 2 tbsp Olive oil...

Ingredients

  • 400g King prawns
  • 1 Red onion (minced)
  • 3 cloves Garlic
  • 200g Cherry tomatoes (halved)
  • 1 tsp Chili flakes
  • 1 tsp Dried Oregano
  • 1 tsp Salt
  • 100g Feta (crumbled)
  • 50ml Ouzo
  • 2 tbsp Olive oil

Cooking Method

  1. The Architect Sauté onion and garlic in oil until sweet; add tomatoes until they burst.
  2. The Bloom Add spices and Ouzo; the sudden steam will release the oregano and aniseed oils.
  3. The Marriage Add prawns; simmer for 3 minutes until pink. Stir in Feta.
  4. The Scorch Place under a hot grill for 2 minutes until the cheese is bubbling and charred.
  5. The Final Flourish Top with a massive hit of raw fresh parsley and extra virgin olive oil.
