THE PEPPER-RED REEF
(Our Play on Greek Prawn Saganaki)
Ingredients: 400g King prawns, 1 Red onion (minced), 3 cloves Garlic, 200g Cherry tomatoes (halved), 1 tsp Chili flakes, 1 tsp Dried Oregano, 1 tsp Salt, 100g Feta (crumbled), 50ml Ouzo, 2 tbsp Olive oil...
Ingredients
- 400g King prawns
- 1 Red onion (minced)
- 3 cloves Garlic
- 200g Cherry tomatoes (halved)
- 1 tsp Chili flakes
- 1 tsp Dried Oregano
- 1 tsp Salt
- 100g Feta (crumbled)
- 50ml Ouzo
- 2 tbsp Olive oil
Cooking Method
- The Architect Sauté onion and garlic in oil until sweet; add tomatoes until they burst.
- The Bloom Add spices and Ouzo; the sudden steam will release the oregano and aniseed oils.
- The Marriage Add prawns; simmer for 3 minutes until pink. Stir in Feta.
- The Scorch Place under a hot grill for 2 minutes until the cheese is bubbling and charred.
- The Final Flourish Top with a massive hit of raw fresh parsley and extra virgin olive oil.
