THE PEPPER-FIRE SLABS
(Our Play on Chinese Black Pepper Pork)
Ingredients: 400g Pork loin (thin strips), 2 tbsp Black peppercorns (coarsely crushed), 2 tbsp Oyster sauce, 1 tbsp Dark soy sauce, 1 tbsp Butter, 1 Large onion (petals), 2 Spring onions (batons)...

- 400g Pork loin (thin strips)
- 2 tbsp Black peppercorns (coarsely crushed)
- 2 tbsp Oyster sauce
- 1 tbsp Dark soy sauce
- 1 tbsp Butter
- 1 Large onion (petals)
- 2 Spring onions (batons)
Cooking Method
- The Scorch Fry pork and onions on high heat until the edges are blackened and charred.
- The Bloom Add the pepper, oyster sauce, and soy with a 30ml splash of water; boil until it form a dark lacquer.
- The Marriage Toss in the butter and spring onions; stir until the sauce is glossy and thick.
- The Finish Serve with a final dust of raw black pepper.
