THE PEPPER-FIRE MINCE
(Our Play on Keema Shimla Mirch / Mince with Peppers)
Ingredients: 500g Lamb or Beef mince, 1 Green bell pepper (finely diced), 1 Large onion (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Garam masala, 1 tsp Black pepper...
Ingredients
- 500g Lamb or Beef mince
- 1 Green bell pepper (finely diced)
- 1 Large onion (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Garam masala
- 1 tsp Black pepper
Cooking Method
- The Architect Fry onions until golden; add ginger-garlic and stir-fry for 1 minute.
- The Bloom Add the spices and a 30ml splash of water to form a thick, dark masala base.
- The Sear Add the mince; break it up and fry on high heat until browned and the fat is released.
- The Marriage Toss in the peppers; stir-fry for 5 minutes until the peppers are soft and the mince is dry.
- The Final Flourish Top with raw red onion matchsticks and a squeeze of lemon.
