THE PEPPER-FIRE MINCE

Ingredients: 500g Lamb or Beef mince, 1 Green bell pepper (finely diced), 1 Large onion (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Garam masala, 1 tsp Black pepper...

Ingredients

  • 500g Lamb or Beef mince
  • 1 Green bell pepper (finely diced)
  • 1 Large onion (finely diced)
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Turmeric
  • 1 tsp Garam masala
  • 1 tsp Black pepper

Cooking Method

  1. The Architect Fry onions until golden; add ginger-garlic and stir-fry for 1 minute.
  2. The Bloom Add the spices and a 30ml splash of water to form a thick, dark masala base.
  3. The Sear Add the mince; break it up and fry on high heat until browned and the fat is released.
  4. The Marriage Toss in the peppers; stir-fry for 5 minutes until the peppers are soft and the mince is dry.
  5. The Final Flourish Top with raw red onion matchsticks and a squeeze of lemon.
