Ingredients: 400g Mixed mushrooms (halved), 2 tsp Smoked paprika, 4 cloves Garlic (minced), 1 tsp Dried Thyme, 1 tsp Black pepper, 50g Butter, 1 tbsp Sherry vinegar...

Ingredients

  • 400g Mixed mushrooms (halved)
  • 2 tsp Smoked paprika
  • 4 cloves Garlic (minced)
  • 1 tsp Dried Thyme
  • 1 tsp Black pepper
  • 50g Butter
  • 1 tbsp Sherry vinegar

Cooking Method

  1. The Scorch Fry mushrooms in a dry pan on maximum heat until they release their water and turn dark brown.
  2. The Architect Add butter and garlic; sauté until the garlic is golden and fragrant.
  3. The Bloom Add spices and vinegar with a tiny 15ml splash of water to release the smoky perfume.
  4. The Marriage Toss until the liquid reduces to a thick, dark lacquer that coats the mushrooms.
  5. The Final Flourish Garnish with fresh raw chives and a hit of sea salt.
