THE PEPPER-CHARRED CHEESE-DISK

Ingredients: 200g Brie wedge, 1 tbsp Black peppercorns (freshly toasted and crushed), 1 Egg (whisked), 50g Breadcrumbs, Oil for frying, 1 tbsp Honey...

Ingredients

  • 200g Brie wedge
  • 1 tbsp Black peppercorns (freshly toasted and crushed)
  • 1 Egg (whisked)
  • 50g Breadcrumbs
  • Oil for frying
  • 1 tbsp Honey

Cooking Method

  1. The Scorch Toast the pepper in a dry pan until it smells sharp; remove.
  2. The Bloom Whisk the pepper into the egg with a tiny 5ml splash of water to release the aromatics.
  3. The Coat Dredge cheese in the spiced egg then breadcrumbs; repeat for a double coat.
  4. The Scorch Merge Flash-fry in hot oil for 45 seconds until the exterior is rock-hard and the center is molten.
  5. The Final Flourish Drizzle with raw honey and finish with extra sea salt.
