THE PEPPER-CHARRED CHEESE-DISK
(Our Play on Fried Brie with Black Pepper)
Ingredients: 200g Brie wedge, 1 tbsp Black peppercorns (freshly toasted and crushed), 1 Egg (whisked), 50g Breadcrumbs, Oil for frying, 1 tbsp Honey...
Ingredients
- 200g Brie wedge
- 1 tbsp Black peppercorns (freshly toasted and crushed)
- 1 Egg (whisked)
- 50g Breadcrumbs
- Oil for frying
- 1 tbsp Honey
Cooking Method
- The Scorch Toast the pepper in a dry pan until it smells sharp; remove.
- The Bloom Whisk the pepper into the egg with a tiny 5ml splash of water to release the aromatics.
- The Coat Dredge cheese in the spiced egg then breadcrumbs; repeat for a double coat.
- The Scorch Merge Flash-fry in hot oil for 45 seconds until the exterior is rock-hard and the center is molten.
- The Final Flourish Drizzle with raw honey and finish with extra sea salt.
