(Our Play on Thai Green Prawn Curry)

- 400g King prawns (cleaned)
- 400ml Coconut milk
- 2 tbsp Green curry paste
- 100g Snap peas
- 1 Red bell pepper (strips)
- Fresh Basil leaves
- 1 Lime (juiced)
Cooking Method
- The Scorch Fry the curry paste in 1 tbsp oil until the spicy perfume releases.
- The Bloom Add a 30ml splash of coconut milk; stir until the green oil separates from the cream.
- The Swell Add the rest of the coconut milk and veg; simmer for 4 minutes.
- The Marriage Drop in the prawns; cook for 3 minutes until they turn pink and the sauce is velvety.
- The Finish Tear in fresh basil and add the lime juice right before serving.
