Ingredients: 400g King prawns (cleaned), 400ml Coconut milk, 2 tbsp Green curry paste, 100g Snap peas, 1 Red bell pepper (strips), Fresh Basil leaves, 1 Lime (juiced)...

Ingredients

  • 400g King prawns (cleaned)
  • 400ml Coconut milk
  • 2 tbsp Green curry paste
  • 100g Snap peas
  • 1 Red bell pepper (strips)
  • Fresh Basil leaves
  • 1 Lime (juiced)

Cooking Method

  1. The Scorch Fry the curry paste in 1 tbsp oil until the spicy perfume releases.
  2. The Bloom Add a 30ml splash of coconut milk; stir until the green oil separates from the cream.
  3. The Swell Add the rest of the coconut milk and veg; simmer for 4 minutes.
  4. The Marriage Drop in the prawns; cook for 3 minutes until they turn pink and the sauce is velvety.
  5. The Finish Tear in fresh basil and add the lime juice right before serving.
