Ingredients

  • 400g King Prawns (cleaned)
  • 400ml Coconut milk
  • 2 tbsp Panang curry paste
  • 1 tbsp Peanut butter
  • 1 Red onion (petals)
  • 1 tbsp Ginger-garlic paste
  • Fresh Lime leaves (shredded)
  • Fresh Red chili

Cooking Method

  1. The Scorch Fry the Panang paste and ginger-garlic in 1 tbsp oil until the spicy perfume fills the kitchen.
  2. The Bloom Add the peanut butter and a 30ml splash of coconut milk; stir until the red oil separates from the cream.
  3. The Swell Pour in the rest of the coconut milk and onion petals; simmer for 5 minutes until the sauce thickens.
  4. The Marriage Slide in the prawns; simmer for 3 minutes until they turn pink and the nutty silk clings to them.
  5. The Finish Top with shredded lime leaves and fresh chili for a sharp aromatic hit.
