Ingredients
- 600g Lamb shank or shoulder (large chunks)
- 2 tbsp Whole wheat flour (Atta) mixed with 50ml water
- 1 tsp Fennel powder
- 1 tsp Ginger powder
- 1 tsp Garam masala
- 600ml Beef or Lamb stock
Cooking Method
- The Sear Fry lamb chunks in oil on high heat until dark and charred.
- The Bloom Stir in spices and a splash of water; fry for 2 minutes.
- The Simmer Add stock; cover and simmer low for 45 minutes until tender.
- The Slurry Pour in the flour slurry; simmer for 10 minutes until sauce is thick and silky.
- The Final Flourish Garnish with fresh ginger matchsticks, chilies, and lemon.
