Ingredients

  • 600g Lamb shank or shoulder (large chunks)
  • 2 tbsp Whole wheat flour (Atta) mixed with 50ml water
  • 1 tsp Fennel powder
  • 1 tsp Ginger powder
  • 1 tsp Garam masala
  • 600ml Beef or Lamb stock

Cooking Method

  1. The Sear Fry lamb chunks in oil on high heat until dark and charred.
  2. The Bloom Stir in spices and a splash of water; fry for 2 minutes.
  3. The Simmer Add stock; cover and simmer low for 45 minutes until tender.
  4. The Slurry Pour in the flour slurry; simmer for 10 minutes until sauce is thick and silky.
  5. The Final Flourish Garnish with fresh ginger matchsticks, chilies, and lemon.
