Ingredients: 500g Beef mince, 1 Red onion (pureed), 2 cloves Garlic, 2 slices Stale bread (soaked), 1 tbsp Dried Oregano, 1 tsp Black pepper, 1 tsp Salt, 1 Egg, 1 tbsp Vinegar...

Ingredients

  • 500g Beef mince
  • 1 Red onion (pureed)
  • 2 cloves Garlic
  • 2 slices Stale bread (soaked)
  • 1 tbsp Dried Oregano
  • 1 tsp Black pepper
  • 1 tsp Salt
  • 1 Egg
  • 1 tbsp Vinegar

Cooking Method

  1. The Build Knead meat, onion, garlic, and squeezed bread until tacky.
  2. The Bloom Whisk egg and vinegar with the spices and a tiny 10ml splash of water; fold into the meat to release the herb perfume.
  3. The Scorch Form small orbs; fry in oil on maximum heat until rock-hard charred and crispy.
  4. The Marriage Drain on paper; the interior should remain soft and herby.
  5. The Final Flourish Serve with raw lemon wedges and a dollop of cold yogurt.
