THE OREGANO MEAT-CLUSTERS

Ingredients: 500g Beef mince, 1 Red onion (pureed), 2 cloves Garlic, 2 slices Stale bread (soaked), 1 tbsp Dried Oregano, 1 tsp Black pepper, 1 tsp Salt, 1 Egg, 1 tbsp Vinegar...
Ingredients
- 500g Beef mince
- 1 Red onion (pureed)
- 2 cloves Garlic
- 2 slices Stale bread (soaked)
- 1 tbsp Dried Oregano
- 1 tsp Black pepper
- 1 tsp Salt
- 1 Egg
- 1 tbsp Vinegar
Cooking Method
- The Build Knead meat, onion, garlic, and squeezed bread until tacky.
- The Bloom Whisk egg and vinegar with the spices and a tiny 10ml splash of water; fold into the meat to release the herb perfume.
- The Scorch Form small orbs; fry in oil on maximum heat until rock-hard charred and crispy.
- The Marriage Drain on paper; the interior should remain soft and herby.
- The Final Flourish Serve with raw lemon wedges and a dollop of cold yogurt.
