- 800g Gammon joint
- 2 tsp Ground Cloves
- 1 tsp Black pepper
- 0.5 tsp Cinnamon
- 100ml Cider
- 2 tbsp Honey
- 1 tbsp Dijon mustard
Cooking Method
- The Boil Boil the ham in water for 20 minutes to desalinate; drain and dry.
- The Bloom Whisk cider, honey, mustard, and spices in a small pan; boil for 2 minutes to release the woody aromatics.
- The Scorch Score the ham fat; paint heavily with the spiced honey silk.
- The Bake Roast at 200°C for 20 minutes until the edges are blackened and charred.
- The Final Flourish Baste one final time with raw honey and top with fresh raw thyme.
