Ingredients

  • 800g Gammon joint
  • 2 tsp Ground Cloves
  • 1 tsp Black pepper
  • 0.5 tsp Cinnamon
  • 100ml Cider
  • 2 tbsp Honey
  • 1 tbsp Dijon mustard

Cooking Method

  1. The Boil Boil the ham in water for 20 minutes to desalinate; drain and dry.
  2. The Bloom Whisk cider, honey, mustard, and spices in a small pan; boil for 2 minutes to release the woody aromatics.
  3. The Scorch Score the ham fat; paint heavily with the spiced honey silk.
  4. The Bake Roast at 200°C for 20 minutes until the edges are blackened and charred.
  5. The Final Flourish Baste one final time with raw honey and top with fresh raw thyme.
