Cooking Method
- The Reduction In a heavy pot, simmer the grated carrots and milk until the liquid has fully evaporated.
- The Scorch Add the ghee and fry the carrots for 10 minutes until they darken and turn glossy.
- The Sweeten Stir in the sugar and cardamom; cook until the sugar has fully dissolved.
- The Final Flourish Top with a massive handful of crushed nuts and saffron strands.
