THE ONION-UMAMI CRUST

- 3 Large White onions (sliced thin)
- 50g Butter
- 10 Anchovy fillets
- 50g Black olives
- 2 tsp Dried Thyme
- 1 tsp Black pepper
Cooking Method
- The Architect Sauté onions in butter on low heat for 15 minutes until they turn into a sweet mahogany jam.
- The Bloom Add thyme and pepper with a tiny 15ml splash of water; the steam will release the herbal oils into the jam.
- The Build Spread the onion jam over the pastry; arrange anchovies and olives in a grid.
- The Bake Roast at 200°C for 20 minutes until the edges are rock-hard and charred.
- The Final Flourish Finish with a heavy rain of raw fresh thyme.
