THE ONION-UMAMI CRUST

Ingredients: 1 sheet Puff Pastry, 3 Large White onions (sliced thin), 50g Butter, 10 Anchovy fillets, 50g Black olives, 2 tsp Dried Thyme, 1 tsp Black pepper...

Ingredients

  • 1 sheet Puff Pastry
  • 3 Large White onions (sliced thin)
  • 50g Butter
  • 10 Anchovy fillets
  • 50g Black olives
  • 2 tsp Dried Thyme
  • 1 tsp Black pepper

Cooking Method

  1. The Architect Sauté onions in butter on low heat for 15 minutes until they turn into a sweet mahogany jam.
  2. The Bloom Add thyme and pepper with a tiny 15ml splash of water; the steam will release the herbal oils into the jam.
  3. The Build Spread the onion jam over the pastry; arrange anchovies and olives in a grid.
  4. The Bake Roast at 200°C for 20 minutes until the edges are rock-hard and charred.
  5. The Final Flourish Finish with a heavy rain of raw fresh thyme.
