THE ONION-LAVA BOWL
(Our Play on French Onion Soup)
Ingredients: 4 Large White onions (finely sliced), 50g Butter, 1 tsp Black pepper, 1 tsp Sugar, 0.5 tsp Salt, 1L Beef stock, 100ml Dry White Wine, 2 tbsp Flour, 4 Slices of Baguette, 100g Gruyère (grated)...
Ingredients
- 4 Large White onions (finely sliced)
- 50g Butter
- 1 tsp Black pepper
- 1 tsp Sugar
- 0.5 tsp Salt
- 1L Beef stock
- 100ml Dry White Wine
- 2 tbsp Flour
- 4 Slices of Baguette
- 100g Gruyère (grated)
Cooking Method
- The Architect Sauté onions in butter on low heat for 30 minutes until they turn into a dark, melting sweet jam.
- The Bloom Add flour and spices with a 30ml splash of wine; fry for 2 minutes until it forms a thick brown paste.
- The Swell Add remaining wine and stock; simmer for 15 minutes until thickened.
- The Marriage Place baguette on the soup; cover in cheese. Grill until it becomes a bubbling charred lava.
- The Final Flourish Finish with raw fresh thyme leaves.
