THE ONION-LAVA BOWL

Ingredients: 4 Large White onions (finely sliced), 50g Butter, 1 tsp Black pepper, 1 tsp Sugar, 0.5 tsp Salt, 1L Beef stock, 100ml Dry White Wine, 2 tbsp Flour, 4 Slices of Baguette, 100g Gruyère (grated)...

Ingredients

  • 4 Large White onions (finely sliced)
  • 50g Butter
  • 1 tsp Black pepper
  • 1 tsp Sugar
  • 0.5 tsp Salt
  • 1L Beef stock
  • 100ml Dry White Wine
  • 2 tbsp Flour
  • 4 Slices of Baguette
  • 100g Gruyère (grated)

Cooking Method

  1. The Architect Sauté onions in butter on low heat for 30 minutes until they turn into a dark, melting sweet jam.
  2. The Bloom Add flour and spices with a 30ml splash of wine; fry for 2 minutes until it forms a thick brown paste.
  3. The Swell Add remaining wine and stock; simmer for 15 minutes until thickened.
  4. The Marriage Place baguette on the soup; cover in cheese. Grill until it becomes a bubbling charred lava.
  5. The Final Flourish Finish with raw fresh thyme leaves.
