THE ONION-JAM BIRD
(Our Play on Chicken Doopiaja)
Ingredients: 500g Chicken breast (chunks), 2 Large red onions (1 sliced, 1 diced), 1 tsp Turmeric, 1 tsp Cumin powder, 1 tsp Garam masala, 100ml Tomato passata...
Ingredients
- 500g Chicken breast (chunks)
- 2 Large red onions (1 sliced, 1 diced)
- 1 tsp Turmeric
- 1 tsp Cumin powder
- 1 tsp Garam masala
- 100ml Tomato passata
Cooking Method
- The Architect Sauté diced onions until golden brown; remove and set aside half.
- The Bloom Add spices and a 30ml splash of water to form a fragrant masala base.
- The Sear Add chicken and sliced onions; fry for 5 minutes until sealed.
- The Simmer Add passata; cover and simmer for 10 minutes until chicken is tender.
- The Final Flourish Top with the reserved fried onions for a textured, sweet finish.
