THE ONION-CLOAKED SILK
(Our Play on Bosnian Sogan Dolma / Stuffed Onions)
Ingredients: 4 Large White Onions (boiled whole, layers separated), 400g Beef mince, 100g Rice (uncooked), 1 tsp Black pepper, 1 tsp Smoked paprika, 0.5 tsp Allspice, 200ml Beef stock, 1 tbsp Tomato purée, 100ml Sour cream...
Ingredients
- 4 Large White Onions (boiled whole, layers separated)
- 400g Beef mince
- 100g Rice (uncooked)
- 1 tsp Black pepper
- 1 tsp Smoked paprika
- 0.5 tsp Allspice
- 200ml Beef stock
- 1 tbsp Tomato purée
- 100ml Sour cream
Cooking Method
- The Build Mix meat, rice, and dry spices with a tiny 10ml splash of stock.
- The Marriage Stuff a spoonful of the meat-silk into each onion layer; roll and place in a pot.
- The Swell Whisk stock and tomato purée; pour over the onions. Simmer covered for 35 minutes.
- The Silk Merge Stir the sour cream into the pan juices at the end to form a thick pink silk.
- The Final Flourish Top with raw fresh parsley and extra black pepper.
