Ingredients: 300g Basmati rice (washed), 500g Chicken thighs (chopped), 100g Greek yogurt, 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 2 large onions (sliced), Mint leaves, Saffron strands...

Ingredients

  • 300g Basmati rice (washed)
  • 500g Chicken thighs (chopped)
  • 100g Greek yogurt
  • 1 tbsp Ginger-garlic paste
  • 1 tsp Turmeric
  • 2 large onions (sliced)
  • Mint leaves
  • Saffron strands

Cooking Method

  1. The Architect Fry the onions in ghee until they are deep golden brown; set half aside for garnishing.
  2. The Bloom Add marinated chicken and spices to the pan; stir-fry for 5 minutes.
  3. The Layer Spread the washed rice over the chicken.
  4. The Steam Add 600ml water, cover with a tight lid, and simmer on the lowest setting for 15 minutes—no peeking!.
  5. The Finish Fluff with a fork and top with the fried onions and fresh mint.
