THE NUTTY WINTER-LEAVES
(Our Play on Chou aux Marrons / Cabbage with Chestnuts)
Ingredients: 1 small Green cabbage (shredded), 100g Cooked Chestnuts (halved), 50g Butter, 1 Onion (diced), 100g Bacon, 1 tsp Nutmeg, 1 tsp Black pepper...
Ingredients
- 1 small Green cabbage (shredded)
- 100g Cooked Chestnuts (halved)
- 50g Butter
- 1 Onion (diced)
- 100g Bacon
- 1 tsp Nutmeg
- 1 tsp Black pepper
Cooking Method
- The Scorch Fry bacon until crispy; add onions and chestnuts and sauté in butter until golden.
- The Bloom Add nutmeg and pepper with a 25ml splash of stock or water; the heat will swell the earthy spice oils.
- The Marriage Add cabbage and 100ml stock; cover and simmer for 12 minutes until soft and lacquered.
- The Final Flourish Finish with a final grating of raw nutmeg and fresh parsley.
