THE NUTTY TANGLE-STRANDS

Ingredients: 200g Flat Rice Noodles (soaked in warm water), 250g King Prawns or Tofu cubes, 3 tbsp Fish sauce, 3 tbsp Tamarind paste, 2 tbsp Brown sugar, 2 Red onions (finely diced), 20g Garlic paste, Crushed peanuts, Fresh lime wedges, Fresh coriander...

Ingredients

  • 200g Flat Rice Noodles (soaked in warm water)
  • 250g King Prawns or Tofu cubes
  • 3 tbsp Fish sauce
  • 3 tbsp Tamarind paste
  • 2 tbsp Brown sugar
  • 2 Red onions (finely diced)
  • 20g Garlic paste
  • Crushed peanuts
  • Fresh lime wedges
  • Fresh coriander

Cooking Method

  1. The Scorch Heat 2 tbsp oil in a wok; fry the prawns/tofu until charred and browned; set aside.
  2. The Architect Sauté onions and garlic in the same pan until deep golden and sweet.
  3. The Bloom Add the tangy silk sauces and a 20ml splash of water to form a thick, bubbling glaze.
  4. The Marriage Add the soaked noodles; toss vigorously until the sauce is absorbed and the strands are translucent.
  5. The Final Flourish Stir in the prawns, top with peanuts and a massive hit of lime and coriander.
