THE NUTTY SESAME EGGPLANT
(Our Play on Bagara Baingan)
Ingredients: 400g Baby eggplants (slit lengthways), 2 tbsp Peanuts, 1 tbsp Sesame seeds, 1 tbsp Grated coconut (toasted and ground), 1 tsp Turmeric, 1 tsp Chili powder, 1 tsp Cumin seeds, 1 tbsp Tamarind paste, 1 tsp Sugar...
Ingredients
- 400g Baby eggplants (slit lengthways)
- 2 tbsp Peanuts
- 1 tbsp Sesame seeds
- 1 tbsp Grated coconut (toasted and ground)
- 1 tsp Turmeric
- 1 tsp Chili powder
- 1 tsp Cumin seeds
- 1 tbsp Tamarind paste
- 1 tsp Sugar
Cooking Method
- The Scorch Fry eggplants in oil until the skins are blistered and soft; remove.
- The Architect Sauté diced onions until golden; add the ground nut paste and spices with a splash of water.
- The Bloom Fry the paste until the oil separates; do not let the sesame burn.
- The Marriage Add eggplants, tamarind, and sugar; simmer for 10 minutes until the sauce is thick and oily.
- The Final Flourish Top with fresh coriander and slit green chilies.
