THE NUTTY SESAME EGGPLANT

Ingredients: 400g Baby eggplants (slit lengthways), 2 tbsp Peanuts, 1 tbsp Sesame seeds, 1 tbsp Grated coconut (toasted and ground), 1 tsp Turmeric, 1 tsp Chili powder, 1 tsp Cumin seeds, 1 tbsp Tamarind paste, 1 tsp Sugar...

Ingredients

  • 400g Baby eggplants (slit lengthways)
  • 2 tbsp Peanuts
  • 1 tbsp Sesame seeds
  • 1 tbsp Grated coconut (toasted and ground)
  • 1 tsp Turmeric
  • 1 tsp Chili powder
  • 1 tsp Cumin seeds
  • 1 tbsp Tamarind paste
  • 1 tsp Sugar

Cooking Method

  1. The Scorch Fry eggplants in oil until the skins are blistered and soft; remove.
  2. The Architect Sauté diced onions until golden; add the ground nut paste and spices with a splash of water.
  3. The Bloom Fry the paste until the oil separates; do not let the sesame burn.
  4. The Marriage Add eggplants, tamarind, and sugar; simmer for 10 minutes until the sauce is thick and oily.
  5. The Final Flourish Top with fresh coriander and slit green chilies.
