Ingredients
- 100g Butter
- Handful of fresh Sage leaves
- 50g Almonds (crushed)
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
- 50ml Pasta water
- 30g Manchego
Cooking Method
- The Architect Melt butter in a pan until it foams; add sage leaves and almonds.
- The Scorch Fry until the sage is crispy and the butter smells like toasted nuts.
- The Bloom Add pepper and nutmeg with a 20ml splash of pasta water to release the perfume.
- The Marriage Toss with hot pasta; stir in the cheese until a thick silk forms.
- The Final Flourish Finish with an extra hit of raw black pepper.
