Ingredients
- 2 Roasted Red Peppers
- 50g Blanched almonds
- 1 clove Garlic
- Handful of fresh Parsley
- 50ml Olive oil
- 30g Manchego (grated)
- 1 tsp Smoked paprika
- 0.5 tsp Salt
Cooking Method
- The Scorch Toast almonds in a dry pan until golden and they smell like warm nuts.
- The Bloom Blitz peppers, almonds, garlic, and spices with a tiny 15ml splash of sherry vinegar to form a rough paste.
- The Silk Merge Add parsley and olive oil; pulse until it forms a thick, chunky red silk.
- The Marriage Stir in the cheese by hand; toss with hot pasta and a ladle of pasta water.
- The Final Flourish Top with raw crushed almonds and fresh parsley matchsticks.
