  • 2 Roasted Red Peppers
  • 50g Blanched almonds
  • 1 clove Garlic
  • Handful of fresh Parsley
  • 50ml Olive oil
  • 30g Manchego (grated)
  • 1 tsp Smoked paprika
  • 0.5 tsp Salt

Cooking Method

  1. The Scorch Toast almonds in a dry pan until golden and they smell like warm nuts.
  2. The Bloom Blitz peppers, almonds, garlic, and spices with a tiny 15ml splash of sherry vinegar to form a rough paste.
  3. The Silk Merge Add parsley and olive oil; pulse until it forms a thick, chunky red silk.
  4. The Marriage Stir in the cheese by hand; toss with hot pasta and a ladle of pasta water.
  5. The Final Flourish Top with raw crushed almonds and fresh parsley matchsticks.
