(Our Play on Pork Ragu with Walnuts)

Ingredients
- 500g Pork mince
- 50g Walnuts (crushed)
- 100ml Whole milk
- 1 Onion (pureed)
- 1 Carrot (grated)
- 1 Celery stalk
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
Cooking Method
- The Scorch Fry pork mince on max heat until browned and crispy clumps form.
- The Architect Add the onion, carrot, and celery; sauté in the pork fat until sweet and golden.
- The Bloom Add pepper and nutmeg with a 30ml splash of stock to release the warming aromatics.
- The Swell Pour in the milk and 200g tomato passata; simmer for 25 minutes until thick.
- The Final Flourish Top with the raw crushed walnuts and a heavy hit of raw parmesan.
