Ingredients
- 200g Blanched almonds
- 100g Stale white bread
- 2 cloves Garlic
- 100ml Extra virgin olive oil
- 1 tsp Salt
- 0.5 tsp White pepper
- 500ml Ice water
- 2 tbsp Sherry vinegar
Cooking Method
- The Swell Soak bread and almonds in water for 20 minutes.
- The Bloom Blitz garlic and spices with a tiny 15ml splash of vinegar to release the sharp aromatics.
- The Silk Merge Blitz the nut-bread mixture; slowly add oil and water until it becomes a bone-white silk.
- The Final Flourish Serve ice-cold; top with raw green grapes and a drizzle of raw almond oil.
