THE NUTTY COCOA-SWELL
(Our Play on Quick Chicken Mole)
Ingredients: 500g Chicken thighs (chunks), 1 Large onion (pureed), 2 tbsp Peanut butter, 2 tbsp Chili powder, 1 tsp Cinnamon, 1 tsp Cumin, 20g Dark chocolate (grated), 200ml Chicken stock, 1 tbsp Raisins...
Ingredients
- 500g Chicken thighs (chunks)
- 1 Large onion (pureed)
- 2 tbsp Peanut butter
- 2 tbsp Chili powder
- 1 tsp Cinnamon
- 1 tsp Cumin
- 20g Dark chocolate (grated)
- 200ml Chicken stock
- 1 tbsp Raisins
Cooking Method
- The Architect Fry onion puree until dark and sweet; stir in the peanut butter.
- The Bloom Add spices and raisins with a 40ml splash of stock; the heat will swell the cinnamon and chili.
- The Swell Add remaining stock and chocolate; simmer for 10 minutes until the chocolate melts into a dark silk.
- The Marriage Add chicken chunks; simmer for 15 minutes until tender and lacquered in the black sauce.
- The Final Flourish Top with toasted sesame seeds and fresh raw coriander.
