THE NUTTY COCOA-SWELL

Ingredients: 500g Chicken thighs (chunks), 1 Large onion (pureed), 2 tbsp Peanut butter, 2 tbsp Chili powder, 1 tsp Cinnamon, 1 tsp Cumin, 20g Dark chocolate (grated), 200ml Chicken stock, 1 tbsp Raisins...

Ingredients

  • 500g Chicken thighs (chunks)
  • 1 Large onion (pureed)
  • 2 tbsp Peanut butter
  • 2 tbsp Chili powder
  • 1 tsp Cinnamon
  • 1 tsp Cumin
  • 20g Dark chocolate (grated)
  • 200ml Chicken stock
  • 1 tbsp Raisins

Cooking Method

  1. The Architect Fry onion puree until dark and sweet; stir in the peanut butter.
  2. The Bloom Add spices and raisins with a 40ml splash of stock; the heat will swell the cinnamon and chili.
  3. The Swell Add remaining stock and chocolate; simmer for 10 minutes until the chocolate melts into a dark silk.
  4. The Marriage Add chicken chunks; simmer for 15 minutes until tender and lacquered in the black sauce.
  5. The Final Flourish Top with toasted sesame seeds and fresh raw coriander.
