THE NUTTY CACAO-BIRD
(Our Play on Turkey/Chicken in Mole - Variation)
Ingredients: 600g Chicken or Turkey (chunks), 50g Almonds, 50g Sesame seeds, 2 tbsp Chili powder, 1 tsp Cinnamon, 1 tsp Cloves, 20g Cocoa powder, 400ml Chicken stock, 1 tbsp Raisins...
Ingredients
- 600g Chicken or Turkey (chunks)
- 50g Almonds
- 50g Sesame seeds
- 2 tbsp Chili powder
- 1 tsp Cinnamon
- 1 tsp Cloves
- 20g Cocoa powder
- 400ml Chicken stock
- 1 tbsp Raisins
Cooking Method
- The Scorch Toast almonds and sesame seeds in a dry pan until dark golden; blitz to a pulp.
- The Architect Sauté minced onion in the chicken fat until sweet and golden.
- The Bloom Add spices, raisins, and nut pulp with a 40ml splash of stock; the heat will swell the cinnamon oils.
- The Swell Add remaining stock and cocoa; simmer until it reduces to a thick, black velvet silk.
- The Marriage Return chicken to the pan; simmer for 15 minutes until tender and lacquered.
