Ingredients: 500g Gnocchi (fresh), 100g Valdeón (or any Blue cheese), 100ml Double cream, 50g Walnuts (crushed), 1 tsp Black pepper, 0.5 tsp Nutmeg...

  • 500g Gnocchi (fresh)
  • 100g Valdeón (or any Blue cheese)
  • 100ml Double cream
  • 50g Walnuts (crushed)
  • 1 tsp Black pepper
  • 0.5 tsp Nutmeg

Cooking Method

  1. The Scorch Toast walnuts in a dry pan until they smell like warm earth; remove.
  2. The Bloom Heat cream in a pan; add spices and a 20ml splash of pasta water to release the perfume.
  3. The Marriage Add the blue cheese; whisk until it vanishes into a thick blue silk.
  4. The Silk Merge Toss the cooked gnocchi through the cream until every pillow is coated.
  5. The Final Flourish Top with the toasted walnuts and raw fresh sage.
