- 500g Gnocchi (fresh)
- 100g Gorgonzola
- 100ml Double cream
- 50g Walnuts (crushed)
- 1 tsp Black pepper
- 0.5 tsp Nutmeg
Cooking Method
- The Scorch Toast walnuts in a dry pan until they smell like warm earth; remove.
- The Bloom Heat cream in a pan; add spices and a 20ml splash of pasta water to release the perfume.
- The Marriage Add the gorgonzola; whisk until it vanishes into a thick blue silk.
- The Silk Merge Toss the cooked gnocchi through the cream until every pillow is coated.
- The Final Flourish Top with the toasted walnuts and raw fresh sage.
