THE NUTMY-WHITE REEF MIST
(Our Play on Balkan Fish with Walnut Sauce)
Ingredients: 2 White fish fillets (boiled or steamed), 150g Walnuts (ground), 2 cloves Garlic (pureed), 2 slices White bread (soaked), 1 tsp White pepper, 0.5 tsp Nutmeg, 1 tsp Salt, 100ml Chicken stock, 50ml Olive oil, 1 tbsp Vinegar...
Ingredients
- 2 White fish fillets (boiled or steamed)
- 150g Walnuts (ground)
- 2 cloves Garlic (pureed)
- 2 slices White bread (soaked)
- 1 tsp White pepper
- 0.5 tsp Nutmeg
- 1 tsp Salt
- 100ml Chicken stock
- 50ml Olive oil
- 1 tbsp Vinegar
Cooking Method
- The Swell Blitz walnuts, garlic, and squeezed bread into a paste.
- The Bloom Whisk spices and vinegar into the nutty architecture; add a tiny 10ml splash of warm stock to release the oils.
- The Silk Merge Slowly add oil and stock until it forms a thick, ivory nutty silk.
- The Marriage Drench the cold or warm fish in the walnut silk.
- The Final Flourish Top with raw fresh parsley matchsticks and pomegranate seeds.
