THE NUTMY-CHEESE FLOWER

Ingredients: 1 Cauliflower (florets), 300ml Whole milk, 30g Butter, 30g Flour, 1 tsp Nutmeg, 1 tsp White pepper, 100g Gruyère (grated)...

Ingredients

  • 1 Cauliflower (florets)
  • 300ml Whole milk
  • 30g Butter
  • 30g Flour
  • 1 tsp Nutmeg
  • 1 tsp White pepper
  • 100g Gruyère (grated)

Cooking Method

  1. The Boil Steam cauliflower florets for 5 minutes until tender; drain.
  2. The Architect Melt butter and flour to a paste; gradually whisk in milk to form a thick white silk.
  3. The Bloom Add nutmeg and pepper with a tiny 10ml splash of warm milk; the heat will release the woody scent.
  4. The Marriage Fold half the cheese into the silk; pour over the cauliflower in a dish.
  5. The Scorch Top with remaining cheese; grill until it becomes a bubbling, charred gold.
  6. The Final Flourish Finish with a final dust of raw nutmeg.
