Ingredients
- 12 Pickled Cabbage leaves
- 400g Fresh Salmon (finely minced)
- 1 tbsp Fresh Dill (minced)
- 1 tsp White pepper
- 1 tsp Salt
- 100ml Double cream
- 100ml Fish stock
- 1 tbsp Horseradish
Cooking Method
- The Build Knead salmon with half the dill and white pepper; add a 10ml splash of stock to loosen the architecture.
- The Marriage Roll the salmon-silk into cabbage leaves; place in a pot.
- The Swell Whisk remaining stock and horseradish; pour over the rolls. Simmer covered for 25 minutes.
- The Silk Merge Stir in cream off the heat until a thick bone-white silk forms.
- The Final Flourish Top with the remaining raw fresh dill and raw lemon zest.
