- 500g Raw green mango (peeled and diced)
- 300g Sugar
- 100ml Water
- 1 tsp Nigella seeds
- 1 tsp Fennel seeds
- 1 tsp Chili powder
Cooking Method
- The Syrup Dissolve sugar in water; bring to a boil until it forms a light syrup.
- The Bloom Add spices and a splash of water to form a fragrant, bubbling paste.
- The Simmer Add the mango cubes; simmer on low heat for 25 minutes until the mango is translucent and the syrup is thick.
- The Final Flourish Finish with a squeeze of fresh lime juice and a pinch of black salt.
