Ingredients: 500g Raw green mango (peeled and diced), 300g Sugar, 100ml Water, 1 tsp Nigella seeds, 1 tsp Fennel seeds, 1 tsp Chili powder...

Ingredients

  • 500g Raw green mango (peeled and diced)
  • 300g Sugar
  • 100ml Water
  • 1 tsp Nigella seeds
  • 1 tsp Fennel seeds
  • 1 tsp Chili powder

Cooking Method

  1. The Syrup Dissolve sugar in water; bring to a boil until it forms a light syrup.
  2. The Bloom Add spices and a splash of water to form a fragrant, bubbling paste.
  3. The Simmer Add the mango cubes; simmer on low heat for 25 minutes until the mango is translucent and the syrup is thick.
  4. The Final Flourish Finish with a squeeze of fresh lime juice and a pinch of black salt.
