(Our Play on Spiced Beef Tartare)

Ingredients
- 300g Beef Fillet (finely minced by hand)
- 1 Shallot (minced)
- 1 tbsp Capers
- 1 tbsp Cornichons (minced)
- 1 tsp Black pepper
- 0.5 tsp Chili flakes
- 1 Egg yolk
- 1 tbsp Dijon mustard
- 1 tbsp Olive oil
Cooking Method
- The Architect Combine the beef with the minced veg in a chilled bowl.
- The Bloom Whisk the mustard, oil, and spices with a tiny 5ml splash of warm water to swell the aromatics.
- The Marriage Fold the spiced mustard silk and the egg yolk into the beef.
- The Mix Stir vigorously until it forms a tacky, uniform mixture.
- The Final Flourish Top with raw fresh chives and serve with charred bread.
