Ingredients: 300g Beef Fillet (finely minced by hand), 1 Shallot (minced), 1 tbsp Capers, 1 tbsp Cornichons (minced), 1 tsp Black pepper, 0.5 tsp Chili flakes, 1 Egg yolk, 1 tbsp Dijon mustard, 1 tbsp Olive oil...

Ingredients

  • 300g Beef Fillet (finely minced by hand)
  • 1 Shallot (minced)
  • 1 tbsp Capers
  • 1 tbsp Cornichons (minced)
  • 1 tsp Black pepper
  • 0.5 tsp Chili flakes
  • 1 Egg yolk
  • 1 tbsp Dijon mustard
  • 1 tbsp Olive oil

Cooking Method

  1. The Architect Combine the beef with the minced veg in a chilled bowl.
  2. The Bloom Whisk the mustard, oil, and spices with a tiny 5ml splash of warm water to swell the aromatics.
  3. The Marriage Fold the spiced mustard silk and the egg yolk into the beef.
  4. The Mix Stir vigorously until it forms a tacky, uniform mixture.
  5. The Final Flourish Top with raw fresh chives and serve with charred bread.
