THE MUSTARD-CHARRED SLABS
(Our Play on Portuguese Steak in Mustard Sauce)

- 2 Sirloin steaks
- 1 tsp Black pepper
- 1 tsp Smoked paprika
- 2 cloves Garlic
- 2 tbsp Dijon mustard
- 100ml Double cream
- 50ml Brandy
- 50g Butter
Cooking Method
- The Scorch Sear steaks in oil on maximum heat for 3 minutes per side until charred; remove.
- The Architect Melt butter in the pan; sauté garlic until fragrant.
- The Bloom Add spices and brandy with a 20ml splash of cream; the sudden hiss will release the meat sugars.
- The Silk Merge Stir in remaining cream and mustard; simmer until it reduces to a thick yellow silk.
- The Marriage Return steaks for 30 seconds until lacquered.
- The Final Flourish Top with raw fresh parsley and extra black pepper.
