Ingredients: 2 Sirloin steaks, 1 tsp Black pepper, 1 tsp Smoked paprika, 2 cloves Garlic, 2 tbsp Dijon mustard, 100ml Double cream, 50ml Brandy, 50g Butter...

Ingredients

  • 2 Sirloin steaks
  • 1 tsp Black pepper
  • 1 tsp Smoked paprika
  • 2 cloves Garlic
  • 2 tbsp Dijon mustard
  • 100ml Double cream
  • 50ml Brandy
  • 50g Butter

Cooking Method

  1. The Scorch Sear steaks in oil on maximum heat for 3 minutes per side until charred; remove.
  2. The Architect Melt butter in the pan; sauté garlic until fragrant.
  3. The Bloom Add spices and brandy with a 20ml splash of cream; the sudden hiss will release the meat sugars.
  4. The Silk Merge Stir in remaining cream and mustard; simmer until it reduces to a thick yellow silk.
  5. The Marriage Return steaks for 30 seconds until lacquered.
  6. The Final Flourish Top with raw fresh parsley and extra black pepper.
