THE MUSTARD-CHARRED REEF
(Our Play on Seared Tuna Niçoise - DNA Edit)
Ingredients: 2 Tuna steaks, 1 tbsp Black peppercorns (crushed), 1 tsp Salt, 1 tbsp Dijon mustard, 3 tbsp Olive oil, 1 tbsp Wine vinegar, Handful of fresh Green beans, 2 Boiled Eggs, Olives...

- 1 tbsp Black peppercorns (crushed)
- 1 tsp Salt
- 1 tbsp Dijon mustard
- 3 tbsp Olive oil
- 1 tbsp Wine vinegar
- Handful of fresh Green beans
- 2 Boiled Eggs
- Olives
Cooking Method
- The Coat Press the crushed pepper into the tuna steaks.
- The Scorch Sear tuna in a white-hot pan for exactly 1 minute per side until charred but raw in the center.
- The Bloom In a bowl, whisk mustard, vinegar, and oil with a tiny 5ml splash of warm water to release the mustard heat.
- The Assembly Arrange the tuna with beans, eggs, and olives.
- The Final Flourish Drench everything in the mustard silk; top with fresh raw parsley.
