THE MUSTARD-CHARRED REEF
(Our Play on Balkan Grilled Fish with Spicy Mustard)

- 1 tbsp Spicy Balkan Mustard
- 1 tsp Smoked paprika
- 1 tsp Black pepper
- 50ml Olive oil
- 1 Lemon (juiced)
- 4 cloves Garlic (minced)
Cooking Method
- The Bloom Whisk mustard, oil, and spices with a tiny 10ml splash of water to form a thick fire-silk.
- The Coat Rub the fish heavily with the mustard-silk; ensure it gets into the scores.
- The Scorch Grill on maximum heat for 5 minutes per side until the skin is rock-hard and charred.
- The Final Flourish Squeeze raw lemon over the hot reef and top with raw fresh parsley.
