THE MUSTARD-CHARRED PORK
(Our Play on Serbian Vesalica / Grilled Pork Loin)

Ingredients
- 4 Pork loin steaks (pounded thin)
- 1 tsp Smoked paprika
- 1 tsp Garlic powder
- 1 tsp Salt
- 2 tbsp Dijon mustard
- 2 tbsp Olive oil
- 1 tbsp White wine vinegar
Cooking Method
- The Bloom Whisk mustard, oil, vinegar, and spices with a tiny 10ml splash of water to form a fire-silk.
- The Coat Rub the pork heavily with the silk; let sit for 30 minutes.
- The Scorch Grill on high heat for 3 minutes per side until the fat is charred and the edges are rock-hard.
- The Final Flourish Finish with raw lemon juice and serve with raw onion rings.
