THE MORNING SPUD-SOUP
(Our Play on Aloo Rasedar / Potato Curry for Puri)
Ingredients: 500g Potatoes (boiled and roughly smashed), 1 Onion (finely diced), 1 tbsp Ginger-garlic paste, 1 tsp Turmeric, 1 tsp Cumin seeds, 1 tsp Garam masala, 2 Tomatoes (chopped), 300ml Water...

- 500g Potatoes (boiled and roughly smashed)
- 1 Onion (finely diced)
- 1 tbsp Ginger-garlic paste
- 1 tsp Turmeric
- 1 tsp Cumin seeds
- 1 tsp Garam masala
- 2 Tomatoes (chopped)
- 300ml Water
Cooking Method
- The Architect Sauté onions until golden; add ginger-garlic and fry for 1 minute.
- The Bloom Add spices and a 30ml splash of water to form a yellow masala base.
- The Simmer Add tomatoes, smashed potatoes, and water; boil for 10 minutes until it forms a thick, soupy curry.
- The Final Flourish Finish with a squeeze of lime and fresh coriander.
