THE MONKFISH RED-SWELL
(Our Play on Arroz de Tamboril)

Ingredients
- 500g Monkfish (cubed)
- 100g Prawns
- 300g Carolino rice
- 1 Large onion (pureed)
- 2 cloves Garlic
- 1 Bell pepper (diced)
- 1 tsp Smoked paprika
- 1 tsp Saffron strands
- 1L Fish stock
- 2 tbsp Olive oil
Cooking Method
- The Architect Fry onion and pepper in oil until sweet and golden.
- The Bloom Add garlic, paprika, and saffron with a 30ml splash of stock; the heat will release the golden oils.
- The Scorch Add rice; toast for 1 minute until stained orange.
- The Swell Add remaining stock; simmer uncovered until rice is tender and the pot is very wet ('malandrinho').
- The Marriage Slide in monkfish and prawns for the last 6 minutes until opaque.
- The Final Flourish Finish with massive raw coriander and a squeeze of lime.
