THE MONKFISH RED-SWELL

Ingredients: 500g Monkfish (cubed), 100g Prawns, 300g Carolino rice, 1 Large onion (pureed), 2 cloves Garlic, 1 Bell pepper (diced), 1 tsp Smoked paprika, 1 tsp Saffron strands, 1L Fish stock, 2 tbsp Olive oil...

Ingredients

  • 500g Monkfish (cubed)
  • 100g Prawns
  • 300g Carolino rice
  • 1 Large onion (pureed)
  • 2 cloves Garlic
  • 1 Bell pepper (diced)
  • 1 tsp Smoked paprika
  • 1 tsp Saffron strands
  • 1L Fish stock
  • 2 tbsp Olive oil

Cooking Method

  1. The Architect Fry onion and pepper in oil until sweet and golden.
  2. The Bloom Add garlic, paprika, and saffron with a 30ml splash of stock; the heat will release the golden oils.
  3. The Scorch Add rice; toast for 1 minute until stained orange.
  4. The Swell Add remaining stock; simmer uncovered until rice is tender and the pot is very wet ('malandrinho').
  5. The Marriage Slide in monkfish and prawns for the last 6 minutes until opaque.
  6. The Final Flourish Finish with massive raw coriander and a squeeze of lime.
