(Our Play on Sautéed Spinach with Japanese Umami)

- 500g Fresh Spinach
- 4 cloves Garlic (minced)
- 50g Butter
- 1 tbsp White Miso paste
- 1 tsp Black pepper
- 1 Lemon (juiced)
- Toasted Sesame seeds
Cooking Method
- The Architect Melt butter and sauté garlic until golden.
- The Bloom Whisk miso and pepper with a tiny 15ml splash of water; the sizzle will release the umami oils.
- The Scorch Add spinach; toss on high heat until collapsed and charred at the tips.
- The Final Flourish Finish with raw lemon juice and a final rain of sesame seeds.
