Ingredients: 500g Lamb mince (20% fat), 20g Fresh mint (chopped), 15g Fresh coriander (chopped), 1 tsp Turmeric, 1 tsp Garam masala, 1 tsp Black pepper, 1 Red onion (finely diced), 1 tbsp Ginger-garlic paste...

Ingredients

  • 500g Lamb mince (20% fat)
  • 20g Fresh mint (chopped)
  • 15g Fresh coriander (chopped)
  • 1 tsp Turmeric
  • 1 tsp Garam masala
  • 1 tsp Black pepper
  • 1 Red onion (finely diced)
  • 1 tbsp Ginger-garlic paste

Cooking Method

  1. The Manual Knead Knead the meat, aromatics, and spices for 5 minutes until the texture is tacky.
  2. The Bloom Add a tiny 15ml splash of water to the spices before mixing to turn them into a paste.
  3. The Shape Roll into 15cm batons; chill for 30 minutes to firm up the fat.
  4. The Scorch Grill at 220°C for 6 minutes per side until blackened at the edges.
  5. The Final Flourish Serve with a drizzle of neon mint relish.
